Thai Green Curry Paste!

  1T  bird's-eye chilies
 1-2  long green chilies, deseeded
  1T  salt
  1T  chopped galangal
2.5T  chopped lemongrass
  1t  chopped kaffir lime zest
  2t  chopped cilantro root or stems
  2t  chopped fresh turmeric
  1T  chopped ginger
2.5T  chopped shallots
2.5T  chopped garlic
  1t  white peppercorns, ground
  1t  coriander seeds, roasted, ground
  1t  mace blades, roasted, ground

Put in your mortar, pestle vigorously.
